The main ingredients.

Boyfriend peeled fresh shrimp, seasoned it with salt, pepper, parsley, and garlic while it sizzled on the pan.

The salsa made with a mango, avocado, cilantro, and lime juice.

Everything wrapped up with spinach in a 100% whole grain tortilla!

The other night I made Shrimp Wraps with Mango Avocado Salsa. Oh boy, was it delicious! Right when I bit in to it, I knew it was my favorite dinner I’ve had so far. The salsa definitely complimented the shrimp perfectly. The avocado balanced out the mango so that it wasn’t too sweet, but just enough. Shrimp is one of my favorite seafood, so I had to find a not-so-boring way to cook and eat it!

Snacking on Chips, Kale Chips That Is

One of the challenges when clean eating is finding the right foods to snack on. When I first started juicing, I discovered kale. I had never heard of this veggie before and had no idea how to consume it except for in my juice. Lately, during my research on different recipes, I’ve quite frequently come across people making kale chips. Which, of course, led me to wanting to try them out! The roomie and I tried it for the first time a couple nights ago and it was surprisingly quite delicious! Today I found myself craving some.

It's funny how a very light sprinkle of extra virgin olive oil and salt can do to the color!

15 minutes in the oven on 350 degrees and you got your healthy chips for a yummy snack!
